A short list of event types we do well.

We are deliberately not a banquet hall. We hold a single event per evening, and we work the types of events Jack has cooked enough of to do at a level he stands behind.

Private home dinners

Typical headcount

Lead time

Snowbird homes, milestone family dinners, intimate hosted evenings — the kitchen comes to you for the night.

Service team

Lead plus one or two service staff — sized to the room and the menu.

What is included
  • Menu built with the host across one or two conversations
  • All prep, plating, and service in your kitchen and dining room
  • Allergens triple-confirmed against your guest list before service
  • Full clean-down — kitchen and dining room returned the way we found them

Weddings — beach

Typical headcount
40 to 200 guests
Lead time
8-week minimum lead time

Permitted public-beach and private-beach weddings along the Palm Beach corridor and Jupiter Island.

Service team

Full kitchen and service crew. Designated 13CT representative on-site for the entire bar service.

What is included
  • Palm Beach County special-event and beach-commercial permits handled at T-30 days
  • Generator rental, sand-stable equipment, vehicle access pass — secured before contract
  • Weather contingency communicated by the third day before the event
  • Coordination with the planner, florist, photographer, and rental vendors

Weddings — country club & estate

Typical headcount
60 to 250 guests
Lead time
6-week minimum lead time

Frenchman's Reserve, BallenIsles, Admirals Cove, Old Marsh, and the private estates and venues that look like them.

Service team

Full crew, coordinated with the club kitchen manager. Service captain and floor lead assigned by name.

What is included
  • Menu tasting on-site or at the kitchen, 3 to 6 months before
  • Full event plan delivered to the club catering office at T-14 days
  • Vendor coordination with the club, the planner, and the rental house
  • Strike, reconciliation, and signed addenda for any service additions

Corporate & club gatherings

4-week minimum lead time

Business dinners, partner retreats, member events at the clubs we already work — held to the same standard as a private wedding.

Service team

Sized to the headcount and the service style. Always includes a service captain.

What is included
  • Plated, stations, or family-style — refined together once the program is set
  • Dietary restrictions captured against the attendee list in advance
  • On-site setup matched to the venue load-in window
  • Itemized invoice and W-9 routed within 48 hours of the event

Snowbird-season cooks

Lead time
Book the season; individual dates locked 14 days out

Recurring private service for households in residence November through April. Same chef, same kitchen, same standards every visit.

Service team

Chef alone or chef plus one — calibrated to the evening.

What is included
  • A flexible season-long agreement, dates added as you confirm them
  • House preferences and household allergens held on file between visits
  • Standing rebooking conversation in March for the next season

Holiday dinners

14-day minimum — capacity fills by mid-October

Thanksgiving, Christmas Eve and Christmas, New Year's Eve — for the families who want the kitchen taken off their hands for the night.

Service team

Lead plus one. Holiday dates are limited to a small number of bookings.

  • A holiday-specific menu, built with the host
  • Delivery, plating, and service in your dining room
  • Pack-up of leftovers in your labeled containers

Drop-off catering

10 to 60 guests

7-day minimum lead time

For lunches, casual gatherings, and the days you do not need a service team in the house.

Service team

No on-site staff — food delivered hot or held cold, with reheat instructions.

What is included
  • Food prepared, portioned, and packaged for safe holding
  • Disposable serving ware available on request
  • Delivery within the corridor
